Vegan stuffing rolls
This delicious vegan-friendly treat tastes truly scrumptious and can be enjoyed by all, whether you’re vegan or not! A clever mixture between two all-time favourites – stuffing balls and sausage rolls, what more could you ask for? With a lovely sweet taste from the carrot and swede mash, combined with the herby rich taste of stuffing and wrapped in crispy golden pastry these are the ultimate Christmas party snack. Create them in no time to go with your Christmas meal or whip them up as a quick snack on boxing day from your left-over ingredients. They’re even easy to make with your kids and are a great way of getting them to eat some more veggies!
Ingredients:
Carrots

Swede
½
Stuffing mix
½ packet
Ready made vegan puff pastry
1 pack
Vegan Cranberry sauce
1 jar
Method:
- Peel and chop the carrots and swede.
- Place the chopped carrots and swede into a pan of boiling water and boil until soft.
- Once softened and ready, drain ¾ of the water and mash the carrots and swede together.
- Add the stuffing mix to the mash and mix well until it comes together in a soft ball.
- Roll out your vegan puff pastry and cut length ways in half.
- Spread cranberry sauce in a thin line along the pastry – leaving a 1cm edge of pastry clean.
- Take some of the stuffing mix and roll into a sausage shape, then place on top of the cranberry jam spread on the pastry.
- Fold over the pastry and push down the edges to seal, use a fork to add a slight crimp if you’re feeling fancy.
- Carefully cut into your desired stuffing roll sizes – this could be bitesize or larger the choice is up to you.
- With a knife create small cuts on the top of each roll to help steam escape. Then brush the rolls with some oil to help create crisp and shine.
- Place into a pre-heated oven at 190˚C until golden brown.

Mulled Cranberry Gin
This boozy festive tipple is bound to go down a treat at your Christmas get together. Sweet, warming and delicious this mulled cranberry gin is an interesting new take on the classic mulled wine and the taste just screams Christmas. A great choice for gin lovers, you could even knock up a whole batch and bottle it as a gift for that gin fan in your life. Super simple and quick to make, all you need is one pan! Create a batch for after your Christmas meal, for a festive party or even just as a warm alcoholic treat after a long day of wrapping presents.
Ingredients:
Gin
50ml
Cranberry juice
100ml
Honey
2 tsp
Cloves
a pinch
Orange zest
½ orange
Cinnamon stick
1 stick
Whole cranberries
Handful
Method:
- Heat all the ingredients in a pan until hot and amend to your taste.
- Strain into a glass and serve with whole cranberries and a slice of orange.
